Mashed Cauliflower Recipe

Mashed potatoes are one of my favorite foods.  I try not to eat them often because I’m avoiding white carbs as often as possible.  Mashed cauliflower is an excellent alternative.  I’ve made a bunch of varieties of mashed cauliflower, but this happens to be my favorite.  My secret ingredient is using cottage cheese to make them extra creamy.  An extra bonus is the fact that it adds protein to the cauliflower mash.

Mashed Cauliflower Recipe

Ingredients
  1. 1 head cauliflower
  2. 4 oz low-fat cottage cheese
  3. sea salt to taste
  4. pepper to taste
  5. 1-2 cloves garlic, optional
Instructions
  1. Chop up the head of cauliflower into bite sized pieces. Bring a large pot of water to a boil and add in the cauliflower pieces. Boil for about 10 minutes or until cauliflower is soft enough for a fork to pierce with ease.
  2. Drain cauliflower and transfer into a food processor. Add in cottage cheese, sea salt, pepper, and garlic. Blend on high until smooth. Serve warm.
