Open-Faced Breakfast Sandwich {Gluten and Grain Free}

This is a go-to favorite breakfast of mine and one of my more popular posts via Instagram and various other social media outlets.

What makes this recipe so unique is the slow carb bread that I use to make it. Check out my recipe for the bread here.   This bread is made with almond flour, flaxseed meal, and garbanzo bean flour so it is completely grain free, gluten free, and packed with many healthy nutrients.

The slow carb bread is stored in the refrigerator, so while my eggs are cooking, I pop a slice into the toaster to warm it up and give it a nice crunchy texture.  

gheeOnce the bread is toasted, I spread about a teaspoon of ghee on top.  For those of you who are unfamiliar with ghee, it is butter that has been clarified making it dairy free.  Regular butter or cottage cheese are nice substitutions if you do not have ghee on hand or if you are not necessarily eating a dairy free diet. However, I do like to add some type of spread to the sandwich to provide an additional boost in flavor.  

Next, layer the bread with the remaining ingredients; a slice of ham or bacon, a fried egg, and a slice of tomato and avocado.  Sprinkle the sandwich with some sea salt and pepper, dig in, and enjoy!

Ingredients
  1. 2 slices of slow carb bread {link to recipe is posted above}
  2. 2 teaspoons of ghee
  3. 2 slices of ham or 2 pieces of bacon
  4. 2 egg, fried
  5. 2 slices of tomato
  6. 2 slices of avocado
  7. Sea Salt
  8. Pepper
Instructions
  1. Spray a pan with non-stick cooking spray and heat on low-medium heat. Crack eggs into the pan, season with salt and pepper, and cook for about 2-3 minutes on each side.
  2. While eggs are cooking, toast slow carb bread in the toaster. Remove toast and spread with ghee. Place one slice of ham, one egg, one slice of tomato, and one slice of avocado on each piece of toast.
  3. Season with salt and pepper, if desired. Enjoy!
