Although it’s the middle of May, for some strange reason it was freezing in both my classroom and my apartment this week. I have a sweet tooth, especially after dinner, and struggle finding sweet chocolaty treats that are also clean and slow carb approved. I was thrilled when I saw a hot chocolate post on pinterest that inspired me to create this fabulous recipe. It honestly tastes just as good, if not better, than your typical hot chocolate and only takes a few minutes to make!
Start by filling a mug with unsweetened almond milk about 3/4 of the way up. Make sure you leave enough room at the top to stir. On my first attempt, I filled my mug too high and made a complete mess on my counter when I mixed the ingredients together! It was not fun.
Microwave the almond milk for about 2 minutes. It’s important to heat up the milk before mixing in the cocoa or else it won’t mix very well. I made that mistake as well!
Once the milk is heated up, stir in about 1 tsp of unsweetened cocoa power. Continue to stir until all of the clumps of cocoa are dissolved into the milk.
Next, add about 5 (or more if you like your hot chocolate really sweet) drops of liquid stevia. I bought mine at Trader Joe’s for about $8. At first I was skeptical about buying it because the bottle is small and it’s kind of pricey, but I use it all the time and each use is such a small quantity, so it will definitely last me a while.
Don’t forget to stir the hot chocolate again once you add the stevia to maximize the full flavor. Drink up and enjoy!! I drank half of mine up and realized I forgot to take a picture of the final product. It was that good! Let me know what you think :)
- 1 cup unsweetened almond milk
- 1 tsp unsweetened cocoa powder
- 5-10 drops liquid stevia
- 1. Fill a mug with almond milk about 3/4 of the way up.
- 2. Microwave for about 2 minutes.
- 3. Stir in cocoa powder.
- 4. Add 5-10 drops of liquid stevia.
- 5. Stir ingredients all together.
- 6. Drink and enjoy :)
