Tomato & Avocado Salad Recipe

I have a slight obsession with avocados.  Ok maybe a bit more than slight.  In my opinion, adding avocado to any meal is an automatic upgrade.  I get overly excited when I cut into an avocado and it comes out like this…..

Perfection! It’s not every day that this happens.  

If you plan to eat an avocado on the same day that you buy it, I advise you to take the avocado test to make sure it is ripe and ready to eat, sans the brown spots.  

Simply remove the stem and check to make sure that there are no brown spots.  If you see brown, your avocado will be brown on the inside and not that glorious green color you’re looking for!  

Be careful though, I find that if you remove the stem, the browning process speeds up.  Therefore, I would only try this strategy if you plan to use your avocados that same day or next day after you buy them.

Tomatoes

I created this side salad one day when I was trying to figure out a new way to eat one of my favorite foods.  In addition to my avocados, I had tomatoes that needed to be eaten.  So I put the two together, added a little bit of oil and vinegar, seasoned them, and was pleasantly surprised by the result.

This side salad is SO simple and such a crowd pleaser!  At times I’ve made this salad to include red onions as well.  Definitely a yummy variation! Let me know what you think. :)

Storing Tip:

For some reason, avocados don’t brown as much if you store them with the pit.  Also make sure that you try to seal it so that no air gets in.  I typically cover my bowl with saran wrap (touching the salad) and then use the top to the storage container as well.  The less air that gets in, the longer it lasts! Although, in my experience, this salad gets eaten up pretty quickly, so storing won’t be an issue! :)

Ingredients
  1. 1 large ripe avocado
  2. 2 medium sized tomatoes
  3. 1 tablespoon olive oil
  4. 2 teaspoons red wine vinegar
  5. sea salt, to taste
  6. ground black pepper, to taste
  7. garlic powder, to taste
Instructions
  1. Chop up both the avocado and tomatoes into bit sized pieces. Mix together in a large bowl. Pour olive oil and vinegar on top and mix with a spoon until evenly coated. Season with salt, pepper, and garlic powder. Serve and enjoy!
