Three Minute Scrambled Eggs

We all lead busy lives and are always looking for quick and healthy meals to make in the morning.  My previous super fast breakfast dish, the Three Minute Omelette, got lots of positive feedback, so I figured I’d experiment to create a few more quick and delicious breakfast recipes.

Like the Three Minute Omelette, these eggs are also made in the microwave.  Therefore, you can finish blow drying your hair or doing your make up while they cook.  That’s the real benefit of these recipes! Every minute in the morning counts!!

Growing up, my parents always made our scrambled eggs with milk and American cheese.  They were super creamy and delicious! In order to mimic that same taste and texture, I substituted water for milk and low fat cottage cheese for American cheese.  I promise you, these scrambled eggs still come out super fluffy and creamy. I (a salt fiend) find that I don’t even need to add salt to the eggs because of the flavor that the cottage cheese provides.  An additional plus.

Three Minute Scrambled Eggs

Ingredients
  1. 2 eggs
  2. 1 tablespoon low fat cottage cheese (I use 2% milk fat)
  3. 1 teaspoon water
Instructions
  1. Spray a mug with non-stick cooking spray. Combine eggs, water, and cottage cheese together in the mug. Whisk with a fork until the cottage cheese is evenly distributed and the eggs are thoroughly mixed. Microwave for about 2 minutes (cooking time may vary depending on your microwave). Remove from mug and chop with a fork for a scrambled effect.
