Zucchini Ribbon Noodles Recipe

I’ve been hearing so much about “zoodles” or zucchini noodles recently as another low carb side option.  However, one problem.  Most of the recipes require a vegetable spiralizer, such as this one.

This awesome kitchen appliance is on my long list of things to buy. So in the meantime, I came up with my own version of “zoodles” that you can make without any fancy tools.  You just need a basic vegetable peeler and zucchini! Enjoy!

Zucchini Ribbon Noodles Recipe

Ingredients
  1. Zucchini
  2. 1 tablespoons butter/ghee/oil of choice
  3. salt and pepper, to taste
Instructions
  1. Begin to peel the zucchini as if you were removing the skin. Once skin is removed, continue to peel the zucchini in order to create ribbon noodles. Keep going until you reach the seeds and ribbons are no longer smooth. Sauté the zucchini ribbon noodles in either butter, ghee, or oil of your choice and season with salt and pepper. Cook for about 3 minutes or until noodles are soft. Enjoy!
